I spy way too much YouTube and subscribe to over 200 channels, so I thought I'd pick the best ones and list them hear in case someone is looking for stuff to spy. Also included some shitty non-helpful descriptions. I didn't put kuskis' channels because lazy and assume everyone knows them already.

Adam Neely - Interesting stuff about music theory, and bass lessons.
Benny Greb - Probably my favorite drummer.
dimsunk - Amazingly funky drummer with some tutorials.
GrooveDrummin - Drummer, heavily inspired by Bonzo.

Geography Now - Quick overviews of all countries alphabetically.
Lindybeige - Various topics around ancient and medieval world, mostly warfare.
Numberphile - Everything related to math, with a lot of different presenters.
Computerphile - Same format as Numberphile, but about programming and computers in general.
Thunderf00t - Debunking bullshit in pop science.
Tom Scott, Matt and Tom - Various topics including technology and linguistics. The latter is just random conversations with him and his friend Matt.
Veritasium, 2veritasium - Interesting videos about science.
Vox - Short documentaries. They got really political before the US election but thankfully that's mostly over now.
Vsauce - Random interesting facts and wanderings.
Wendover Productions - Random topics, largely geography.
WonderWhy - Again mostly geography.
Zepherus - Random things explained.

Primitive Technology - Aussie progressing in technology starting from nothing, making tools from wood and stone, soon progressing to metallurgy.
BostonDynamics - Robot dogs falling over.
Hydraulic Press Channel - Things being crushed with an unapologetic Finnish accent.
Jaka Parker - Daily life in North Korea by the husband of an Indonesian ambassador (I think), so it's upper class by DPRK standards, but still interesting.

Interesting list. I'll definitely check out your linguistics channels, since I've gotten a little into linguistics recently.

I'm always looking for interesting science channels, especially maths. Numberphile has already been mentioned, and apart from that:

i share many of louskudabs list but too lazy to check if every mine is there or not so i'm also not lazy by putting them again:

apetor: best humor from norgeland obv!
ashens: good funeyh man testing out many old expired foods and various lol toys and such
billyonthestreet: usually not mega fan of such humor but duno kinda enjoy now and then, very adhd kinda "tv" humor that would fit like on some conan segment or such just "interviewing" people on street. duno even why like but oke =D
druaga1: might hev seen some videos from him before, dude who tried to install latest windows by upgrading all the way from dos or such. tests out random old shit computers and installs old software, dank weed humor 420 yolo funeyh
electroboom: unibrow doing electronic fails on purpose, very funeyh man
failarmy: oke duno usually hate such youtube channels but this one least cancer and dont steal stuff, basically americas funyest home videos in youtube format. just nise no fucks or over the top edit with stupid youtube shit, just videos of fails and funeyh things.
first we feast: mainly watch for the hot wings show episodes, basically usually interesting people as guest and they eat spicy wings and talk about stuff. kinda fluff content at times and not interesting people all the time, but usually man has nice questions and good humor and such so generally enjoy.
good mythical morning: skip a lot here, and mostly view for the "will it.." episodes and when try out food and stuff. pretty funny guys and likeable all around, just not super interested in the very generic youtube-y bandwagon stuff they make in between.
h3h3productions: goofs and gaffs what not to like
hydraulic press chanel: little skippable at times, but usually oke quick enjoy
joe goes: very funeyh man doing cringe and awkward interviews on purpose
lil dicky: mega funeyh likeable hip-hop dude, has his own extrme funeyh music videos, and random other stuff
mike boyd: guy that tries to learn random things quickly, very nise enjoy
joe rogan experience: podcast show with random interesting guests. depends who's on it whether watch or not. sometimes joe rogan can get a bit repetetive orka with his bullshit stuff, but mostly nise to listen to if good guests.
scam school: some skippable, but enjoyable videos showing off easy magic tricks and bar tricks and puzzles etc.
xleahbee: videogamedunkey and his gf, doing random idiot things, for some reason like spy
you suck at cooking: quality humor with food
your mom's house podcast: funeyhst podcast in world with two very nice comedian husband+wife pair

science and duno things:
captaindisillusion: very nice humor man and good production and debunking fake videos and shit
codyslab: allround wtf dude, you might seen random videos of his. has own mine that he extract minerals from, drinks cyanide casually, extracts precious metals from every day items and does all kinds of science and explaining of things. mega nise recomend!
computerphile: explain computer things with nise mans
drugslab: very interest stuff, some young mans that tries out various drugs and their effects. also hev impsy cutest girl in world in few episodes uuuuuuugh so nise.
engineerguy: very nise thorough and easy to digest videos on random science stuff, usually in more practical stuff
every frame a painting: extreme nise movie technique explaining and things
jayztwocents: computer stuff mostly, reviews and building shit
linustechtips: computer stuff
numberphile: maths, how does they work :^)
objectivity: showing off random things in royal society archives, giving history about items and stuff, very enjoy
periodic videos: very likeable man telling about elements
photonicinduction: taking electrical things to teh extreme, weird funeyh man =D
sixty symbols: random science stuff
smarter every day: very likeable dude explaining science things in ez understand way
techmoan: guy showing off old audio and video equipment in detail, reviewing things etc, very nise
the 8 bit guy: max nise videos of old computer and console stuff with detailed information of how things were made and works etc.
the obsolete geek: same as above, even done some coop videos together with him

ferrisstreamsstuff: pretty dead but magically hope he starts again some time. reason i got into learning rust programming language, very extreme nice dude, mainly these videos go through him making a n64 emulator in rust from scratch.
food wishes: food recipes. this guy is extrme funny in dry way. i think most people will first be put off by the way he speaks, but eventually if watch more you'll start loving it and it dont sound as weird
frank howarth: 99% woodworking, mega nise dude and chill videos of him making things
get hands dirty: nicely shot stuff of girl doing woodworking mostly, now and then other random things.

home & garden for mere mortals: =D just random interest tips here and there, diy stuff in home etc. mostly watch because came from other woodworking channel, but still nise stuff here too now and then.

markusfuller: electronics, repairing and taking apart stuff, making random things
matthias wandel: mega sick smart woodworking dude, also makes a lot of random stuff
peter brown: more esoteric weird woodworking, putting random shit in resin and making things out of it etc
philip buuck: pretty dead now sadly, but very nise man making Quake in C from scratch, by referencing the released quake source code. basically teach you c along the way. mega nise
primitive technology: mega fav, man making things from nature and showing how could live off the land sort of
rainfall projects: woodwork stuff
retro game mechanics: duno if this will stay alive, but so far nise videos explaining old games and how the programming in them work
rust: rust programming language channel, has random talks recorded
steve ramsey: nise dude doing woodwork stuff and small projects
tested: pretty much only watch for the adam savage videos, since how not to like him
tips from a shipwright: i dare you to start spy the totalboat series and not end up watching all of them because max nice dude explaining stuff you might not even hev interest in, yet you keep lysn. one of max fav series
tony & chelsea northrup: photography reviews and tips and whatnot

gaming:
brian kibler: hearthstone highlights, also hev cutest fluffy dog in world, impsy adorabel
dabacabb: overwatch highlights and funny moments etc. kinda skip a lot but now and then when bored and want watch some i do it
day9tv: most enjoyabel laff, plays many random games. skip a lot of stuff not interested in, but generally very nise to random spy if bored and nothing else
game sack: mega nise funeyh dudes playing random console games, each episode featuring a special theme usually. they review and talk about them in-depth and explains origins and shit. very entertain!
geek and sundry: kinda more table-top and irl gaming orientated. usually skip a lot here because channels features a lot of diff people and shows, but has nise D&D one, and tabletop stuff nise in general.
imaqtpie: league of legends, dank humor and funeyh dude
insightonesports: esport discussion shows and such, mostly league/overwatch. dont watch much anymore and skip most, but still oke if like such
kripparrian: mostly hearthstone nowadays
matthew colville: 99% D&D talk, very nise dude
sp4zie: league of legends random bullshit stuff
trolden: hearthstone highlights
videogamedunkey: best dank humor and videos

These are not all, some of them have been mentioned (FailArmy, JukinVideo, HPC, LAHWF, Hearthstone channels, etc.), but these are the others I watch and find at least mildly interesting:

Fun
BaracksDubs - pretty LOL, but not so many vids lately. I hope they will do Trump too.
BirdBox Studio - awesome funny animations, prolly ded channel tho.
Stuart Edge - great fun vids among people, social experiments. Mormon tho.
Viral Brothers - this Czech duo (and their SO's) make some freaking fun, and even (try to) talk in English, so anyone can watch. Pranks, revenges, crazy stuff. Since Anakin (yes, that's the name) was born, it's not so much about pranks now...

Musik
Epic Music VN - I usually liste to this one, pretty epic. They do live music streams too.
Alex Goot - pretty ok musik guy, usually covers
Sungha Jung - prolly best guitarist in the world?
KHS - very talented young guy, doing awesome music vids with other youtube stars and other peopel, he is great producer, has amazing ideas, one-take videos, playing with coke bottles, etc. etc., really nice.
Lindsey Stirling - I love her violin, even she is not Vanessa Mae, but the music has its energy and thats great. I use it as background for gaming. She's mormon, tho.
The Piano Guys - because TPG are amazing. Chill musik and chill people. Mormon tho.
Tiffany Alvord - when I need to wash dirt off my brain, I play something from her channel. Otherwise no spy.

Movies
Mark Kermode & Simon Mayo - movie reviews for BBC radio 5. Kermode is great at reviewing new movies and catches the point quckly and precisely. My go-to channel for reviews
How It Should Have Ended - HISHE is fun.

Geek, Sport
Me, Myself and Pi - geeky math young guy talking about stuff, reciting Pi, solving Rubiks, etc.
Brodie Smith - because Frisbee
People Are Awesome - the more awesome these people are, the more I feel like shit. But those vids are nasty cool.
TED Talks - time to time there is something valuable, but lately those talks are being all the same (all the same shit).

Gaming
Noob from UA - Mostly Dota vids and even live streams

Dr. Jordan Peterson - extremely informative on psychology, philosophy, history and controversial current social problems
Steven Crowder - one of the better places to go to understand right wing sentiments, also very entertaining
Sam Harris - super interesting stuff mostly about science and philosophy
