This is one of the most important parts of the riddle.
...but that's exactly what med me guess Haircut, after half the level you get to all the apples and you can easily bang your head when taking them :(

My new guess is Islands in the Sky, but I can't see how the riddle fits any internal better than Haircut :?

Well, for starters, there were no real other options left :P

I looked for levels where you use a lot of islands at first but later drop most of them. And Precarious also seemed to fit very well with the perhaps except for one part.

well nice one. complete answer:

There are 12 polygons in the level, 1 is the "background polygon", and 11 which you can drive on.

At first you need them all,
perhaps except for one

when you are a beginner you need to drive on all polys to clear lev, except for the background polygon.

At first you inbetween them fall
trying to make the run

you can easily fall inbetween some of the islands when youre a beginner

At last you have what it takes
when to hang, and use the brakes

well, there are 2 hangs, and you brake maybe twice or 3 times when driving pro style, not quite sure.

You're down to 50% of it all
Watch your head, take them all

you only need to use 6 out of the 12 polygons to clear lev pro style, which I'm pretty sure is 50% of the polygons.

When you are a beginner, you go around,
as a pro you take the shortcut.

When you are a beginner you zig-zag down,
as a pro you take the shortcut.

As a beginner you around the apple race,
as a pro you take the shortcut.

as a beginner you end it slowly
as a pro you end it quickly
